Banana bread is my favorite treat, delicious just out of the oven with a thick layer of coconut oil or some date syrup. I always eat it outside because somehow I don't always make banana bread. Because I only make vegan recipes, baking is sometimes a challenge. Eggs or cottage cheese are often used to make the bread a bit airy and to let it bind well. Finding a really good replacement was quite a challenge! Until I came across a delicious recipe on the green girls site that used dates! That I never thought of that before !! I seriously dived straight into the kitchen and oh boys, after 20 failed recipes I finally have a banana bread with chocolate for you here .. Yes! So it finally worked! Not only does this taste good but it also looks great (you shouldn't say that about your own creations, but I can't resist this time!) Something I couldn't always say about my previous banana breads. Mind you, this is a chocolate banana bread. I found my dough a bit too wet, for this reason I added a lot of cocoa powder. This made it a bit drier, so the bread didn't stay so sticky inside. I think it should work without the cocoa powder but I have not tried this myself ..
