Grate the carrot and finely chop the parsley. Slice the avocado.

Mix grated carrot with eggs, almond flour, coconut flour, cinnamon, bacon cubes and parsley and stir well.

Heat the coconut oil in a frying pan and pour a large spoon of the mixture in it. Flatten the heap of batter with the back of the spoon and bake the carrot cookie golden brown on both sides. You can fry 4 carrot cookies at the same time.

Repeat until the batter is finished and serve with half an avocado per person.
