Ingredients: 10 g Coconut oil; 10 g Ghee; 0 pinches Salt; 0 tsp Bakin Soda; 2 tsp Maple syrup; 10 g Chocolate chips; 1⁄4 Tbsp Gelatin powder; 0 tsp Vanilla powder; 10 g Tigernut flour

Preheat the oven to 345°F and line a baking sheet with baking paper.

Melt ghee and coconut oil in a saucepan, but don't let the fat get too hot. Make sure it is just melted.

Combine tigernut flour, plantain flour, gelatin powder, vanilla, baking soda and salt in a mixing bowl and stir well.

Add ghee, coconut oil and maple syrup and stir until thick.

Put the mixing bowl in the fridge for 10-15 minutes so the batter can firm up.

Knead the chocolate chips into the dough and divide into 6 equal pieces.

Form cookies from the dough pieces and place them on the baking sheet, leaving at least 2 inches between the cookies.

Bake the cookies for 13-15 minutes until golden and done. Let them cool off completely.
