Ingredients: 125 ml Coconut milk; 2 pieces Egg yolks; 2 Tbsp Maple syrup; 25 g Chocolate pure (> 70% cocoa); 1⁄4 tsp Peppermint extract

Mint stracciatella ice cream

Combine half of coconut milk with the egg yolks, maple syrup and peppermint extract in a blender and grind until smooth.

Pour the mixture into a pan and stir the other half of coconut milk.

Heat the mixture while stirring to 185°F and then let it cool completely.

Follow the instructions of your ice machine to make ice cream.

In the meantime, melt the chocolate au bain-marie and pour it with the ice cream mixture in the ice cream maker when the ice cream is nearly firm enough. The chocolate solidifies almost immediately and small chocolate shots form in the ice.
